New Year reception in Amsterdam for 120 guests
Not a seated dinner but a moving reception: successive waves of bites and small plates for 120 guests, all evening long.
At a New Year reception you want people moving and talking. A seated dinner stops that; a buffet creates a queue. So we did it differently.
The evening ran in waves: a new small plate passed around each time, hot and cold alternating, so something new kept arriving without anyone having to queue for it.
For 120 guests that means tight timing in the kitchen and a service team that reads the room. Exactly the kind of catering we have been doing for years.
